If you haven’t seen me in person, since I got back from my vacation to the Wild West, you haven’t heard my speal about how important it is for everyone to surround themselves with nature every once in a while. You haven’t sat next to me while I breeze through my 500+ photos from the trip, each with a story behind it. You haven’t seen my face light up the way it does only after a trip like this.

Why Fermented Foods Are SO Important (and homemade pickle recipe)

Don’t pickles just remind you of summer? I mean, sure, I’ll have them on burgers throughout the year, but I don’t eat that many burgers. In the summer, though, we have the constant aroma of barbecues and charcoal grills wafting through our neighborhood. How can you not crave a burger with pickles?! A friend of mine recently event told me that her go-to snack in the summer is pickles.

Unfortunately, as your health coach, I have to inform you that pickles aren’t as healthy as the light, refreshing “cucumber” snack seems to be, when bought from the store. The ingredient list includes four preservatives, artificial flavorings and food colorings.

Yuck.

Bear with me on this post. If you’re vegan, disregard. If you’re squeamish with raw meat and/or with the thought of picking bones out of a fish, you might want to steer clear. Then again, I thought I was too… until I tried this! So maybe trust your health coach for a moment here?

I have started a six-week cleanse that Mark Hyman, MD shares in his book, “The Blood Sugar Solution." It’s a fantastic book about lowering your risk for obesity, diabetes, thyroid problems, hormonal imbalances, and what interested me most, inflammation.

It’s mid-June already. Does that shock anyone else as much as it does me? I mean, most months I’m saying, whoa, it’s over already? But when it comes to summertime, I am very observant of how fast time flies, and how much I want to do before it’s over.

That would explain why it’s been go go go for me lately. In fact, it’s probably why my body decided to shut down last week in protest. It was saying relax. You still have two-and-a-half months of summer left.

A couple weeks back, during a cooler 70-degree weekday, I decided to do just that. Relax, unwind. I do that best by baking, one of my favorite pastimes.

Farmers Market Bliss (and strawberry rhubarb compote)

Last week was the beginning of my town’s farmers market! You have no idea how excited this makes me… but do you remember that feeling you got as a kid on Christmas morning? Yeah, it’s kind of like that.

I live in a small town with not much of anything, so for organic produce, I usually drive 45 to 50 minutes to the closest Whole Foods or Trader Joes. The farmers market saves me a ton of time.

When asked if I support organic or local, the answer is both. That’s ideal. However, not all the produce stands at my markets are organic. Did you know that in order for a farmer to be titled USDA organic, they have to follow very strict, thorough rules? Around me, it’s a lot of small farmers that don’t have the money or time for that. Still, many of them don’t use any sprays or pesticides on their produce.

Also, think about it this way. Your organic mangoes, for example, are probably from Mexico. Think about the time, people and energy it takes to pick them in Mexico and then transport them all over the United States. That’s a lot of gas, a lot of hands, a lot of time.

Although I was back to sipping homemade hot chocolate tonight, the weather is heading right back into summer temps and I’ll be back to brewing this sun-drenched ice tea this weekend!

This year is the first time I made sun-brewed tea. All of a sudden, the temperature here in Illinois climbed from 60s to 80s and almost to 100 this past weekend! One day, I’m sipping hot herbal tea with raw honey (I even went tea tasting last week at Bello Tea in Downers Grove, would highly recommend it!) and the next day I’m filling my glass of water with ice cubes, finding any way I can to cool my body in the abrupt heat wave.

Staycation Smoothie! (and mango papaya smoothie recipe)

The last few days, or even weeks, have at times made me feel like I’m on a tropical vacation. The air just holds that feeling of warmth and humidity with a slight breeze. I can almost see a palm tree in front of me, with its palms gently blowing in the wind. Almost.

Can you tell I’ve been wanting a vacation? It must be the increased sunshine, fans, tank tops, flip flops and smoothies that are all making me think of places far more tropical and exciting than Illinois. However, you work with what you’ve got, right? Well, what I’ve got is a fridge full of delicious, mouth-watering fruit.

Strawberries burst back into season at this time of year, which means I’ve had at least one container of them at all times. Asparagus is also back in season, along with grapefruit, blackberries and fresh green beans. These are all local produce that naturally grow at this time of year, meaning our bodies are meant to indulge in them. I find that my body has actually been craving berries and citrus! These foods detox the body, which is vital when helping it convert from heavy winter foods to light summer foods.

Favorite Dinners Mom Cooked (and chicken and dumplings recipe)

I bet that for most of you, your favorite dinner was something mom made that you all enjoyed around the table together. For me, it was chicken and dumplings. For whatever reason, I loved the combination of warm, spicy chicken next to fluffy, creamy dumplings and some sort of vegetable. Every year, for my birthday, this is what my mom would make me.

I GRADUATED!!!

I’m referring to my nutrition program with the Institute of Integrative Nutrition, which is what first began this blog, this website, this journey as a certified health coach. I am so proud to have reached the end, but as our founder Joshua Rosenthal said, it’s really just the beginning.

That couldn’t be truer! Now that I’m officially certified by the American Association of Drugless Practitioners, with a diploma from my school on its way, my time can be more focused on my health coaching business, For the Health of It.

Simple Creations (and kale black bean bowl)

You know what’s great about making your own food? As long as you go shopping, and you have food in the fridge, you don’t need a recipe to follow. You can just throw whatever you already have together and make it delicious. How?

Condiments. This is a topic I discuss with my clients in my six-month health coaching program. It’s especially helpful for marriages or families where people have different tastes and/or eating habits. What I mean by this is if you collect a bunch of spices, sauces, vinegars, oils and dressings, each person at the dinner table can make a dish their own.

You start with simple ingredients, such as a few vegetables. For me today, this meant kale, mushrooms, onion, garlic and tomato. So I threw them into a steamer basket I have and steamed them on the stove for about five minutes. (You could also boil them, bake them, fry them, sauté them, microwave them, whatever.)
